Hi Johanna, I would thaw both overnight in the refrigerator first to allow for accurate measuring, draining any excess liquid and cutting any large pieces down to size, then following the recipe. I hope you love them! – Meggan

Hi Pamela, thanks so much for writing, rhubarb does have such a delicious flavor. I’m glad you love the muffin batter. I would omit the strawberries and add another cup of rhubarb. I think the moisture of the fresh rhubarb will keep the batter moist. Please let me know how they turn out! – Meggan

Thank goodness the French use rhubarb purely and liberally. Which brings me to my question, if I omit the strawberries how do I adjust the other ingredients? The underlying muffin recipe is delicious as I have made the blueberry. Thank you so much!
