Hi Christina! The good news is, the pineapple goes in the frosting, not the cake. So you could simply leave it out entirely and still put the oranges in the cake. I’m sure you could substitute a different canned (drained) fruit in the frosting if you wanted to, whatever sounds good. It would need to be finely crushed though, and it would change the flavor, but anything that sounds good to you is fair game! I hope they love it! – Meggan

Hi Maggie, thank you for your comment. I’m happy you received a lot of compliments. One container of whipped topping is about 6 cups, my tip is to whip 3 cups of heavy cream into 6 cups. (I think the confusion may be coming from the volumes.) Thank you again and take care! – Meggan

I got tons of complements and asked for the recipe several times. I did the cake exactly as written except I used a butter cake mix. I used a glass 13 x 9 pan where it I usually cut the temp by 25 degrees and time by 10 minutes but I forgot and cooked it at the listed temp. It was not done in the middle and took 10 minutes longer than the stated time but turned out beautifully. I do not use Coolwhip and I think you are off on the 6 cups of heavy cream in place of 16 oz. of Coolwhip. 2 cups (16oz.) of heavy cream made a thick layer of topping I did drain my crushed pineapple as the only one I could find was in syrup and I didn’t want it too sweet. Perfection!5 stars
